Sausage rolls

Yesterday I had a day off so I thought of baking sausage roll, which I have not baked for a year or so, since I had Tyler. I was lucky enough that Tyler had been a really good boy, that he gave me an hour and half for me to get the rolls done :) which of course, he must have Elmo on the TV to entertain him.

I got the recipe randomly from the internet, which turned out not bad, it was easy to bake.

Homemade Hot Dog Rolls

- 1 cup milk
- 1/2 cup water
- 1/4 cup unsalted butter
- 4 1/2 cups flour (unbleached, whole wheat, or a mix)
- 1 package instant yeast
- 1 tablespoons honey
- 1 1/2 teaspoons salt
- 1 egg, room temperature

- Heat the milk, water, honey and butter until butter is melted. Check temperature. Depending on the temperature, let cool to 120F.
- Carefully beat in egg.Mix 2 cups of the flour, yeast, and salt. Mix into the milk mixture. Stir in the rest of the flour, 1/2 cup at a time. Beat well after each addition.
- When the dough pulls together, (it will form a soft ball) turn it out onto a floured surface and knead until smooth and elastic.
- This should take about 5 minutes.Divide dough into 12 -16 equal pieces. This will depend on the size you want for the finished bun.
- Shape into smooth balls, flatten slightly, and place on a silpat covered baking sheet.Let rise for 30 to 35 minutes.
- When buns have almost doubled bake at 400 degrees for 10 to 12 minutes. If you are making hot dog buns I find it easiest to roll the dough out into a large rectangle and cut into smaller rectangles. Let rise with sides touching.
- You can brush the tops with egg wash and sprinkle with poppy seeds, sesame seeds, coarse sea salt, or whatever you like. You can add dry onion soup mix for onion rolls. These are very versatile!Makes 12-16

This recipe could give me 36 mini sausage rolls (cut 1 sausage into half). So, I freeze the un-baked ones in the freezer to be eaten later on.

This is Tyler's first sausage roll! and he loves it :)

With a face like that, all hard work is worth it =D

March 2011

This is Tyler at 17 months, and being more and more mischevious and his brain is like a sponge now! He'd immitate us while hubby and I were talking and we should watch our language with him around :P At 17 months, he likes going through stuff, taking it out and placed it elsewhere! It happened to my DVD, aircond or TV remote all the time, it'd be quite frustrating sometimes.

Making funny faces...

He enjoys taking on "toy rides" in the shopping centres, the pictures above showed him while he was HIGH on the rides :P
Both hubby and my birthday fall in March, actually I'm just older by a week hehehehhehe Last week, it was my birthday, but we didn't do anything much as Tyler wasn't feeling well and he gets moody when we're out, so we couldn't do much.
This week, Tyler was much better (finally..) so we could all go out to celebrate hubby's birthday. Hubby had the best birthday ever, as he got to celebrate 3 days in a row prior to the actual date, as he claimed :P First was in Holiday Inn, then the following day in Buntal and the actual day in Lok Thian.

He got his first Rolex at 29, given by his parents =)

Tragic week

This whole week have been a tragic one for me. Exactly a week ago, hubby almost lose his right index finger while trying to fix a machine at work. It was rather painful for me to watch and the doctor described it as "near amputation" how scary is that?

The wound looks horrible so I shall not post any pictures here, or it'll ruin my reader's appetite. We went to see the doctor again today to examine the healing of his finger, hubby was actually scheduled to remove his stitches on Monday (3 more days to go) but I guess the wound has not dried up properly yet, therefore it was scheduled exactly a week from today. I cannot imagine the pain he is going to endure in 7 days to come.

3 days ago, Tyler came down with fever =( I noticed that last year in March, he had fever too, now he has fever in March again. I heard an old saying today, kids will have fever because they are growing taller. I don't know, this is the first I've heard, I was rather amused by it. hahahahha

Luckily Tyler got better today, but he's so clingy and my arms are really sore from carrying him, though he weighs only 10.6kg at 16 months, but it's tiring though. He's getting sore throat too, I can tell by his voice. I hope he gets better soon. Will update soon.
